Scotland The Bread

A collaborative project to grow better grain and bake better bread with the common purpose of nourishment, sustainability, and food sovereignty.

Scotland The Bread is a Member-owned community benefit society:

  • Growing, milling and selling organic, nutritious flour
  • Campaigning for a better, more biodiverse flour and bread supply
  • Researching and improving the nutrient profile of grain
  • Supporting citizen growers to produce their own flour

They are working towards a sustainable, fair supply of flour that better nourishes people and the planet. This revolution aims to improve the quality of a staple food for everyone: funded by our customers, Members and Supporters to provide flour for all.

Scotland The Bread’s organic heritage wheat and rye grain is milled in small batches on a UK-unique Zentrofan mill in Unit 8, Bowhouse. This cyclone mill processes our whole grains into cool, ultra-fine wholemeal flour, while preserving their higher-than-ordinary nutrient levels. Grown on Balcaskie Estate, our traditional grains have been meticulously researched and chosen for their suitability for the Scottish growing conditions and climate, their biodiversity, their considerably higher levels of vitamins and minerals than conventional grains, and their exceptional flavour.

Scotland The Bread began in 2012 as a project within Bread Matters. It brings together plant breeders, farmers, millers, bakers, nutritionists and citizens with the common purpose of producing nutritious grain, milling it close to home and using it to make wholesome, slowly-fermented bread that everyone can enjoy.

The society is managed by a Board of Directors headed by Chairman Andrew Whitley, with the day-to-day operations taken care of by Miller-Manager Connie Hunter and Assistant Miller Clement Boucherit. The Board answer to the 200-plus society shareholders, who make up an active community whose skills and participatory engagement form a network of activity.

There are many ways to get involved with and support Scotland The Bread’s work. The society welcomes new shareholders at any time, and offers an annual subscription to access exclusive society benefits. We are a registered charity, and grateful for donations to further and speed up our ambitions. You could get involved in Soil to Slice, our citizen science programme that encourages communities throughout Scotland to get involved in growing, harvesting, threshing, milling and baking with more nutritious grains in their local area.
