Organic Mutton Box

The box will weigh approximately 11 kg and will contain a selection of the following cuts;

• Shoulder – Bone in or Boned and rolled
• Leg Bone in or Boned and rolled
• Shanks (fore and rear)
• Rib Chops x 8 (can be left as a rack, or half rack and 4 chops)
• Loin Chops x 6
• Neck Fillet
• Whole Rump (or chump chops)
• Flank Mutton

We hang our mutton for 3 weeks, a longer hanging time softens the texture of the meat, developing the flavour.Pre-order now and a date for courier/ collection will be allocated.
