One of the nation's favourites and superb at any time of the year, Lamb Cutlets are a versatile cut that can be used any day of the week. Over the summer we love to marinate in mint sauce and BBQ until the fat is golden and crispy and the meat tender.Our lamb is 100% grass-fed and spends its life in the fields around the estate. By focusing on several different breeds the farmers are able match the seasonal growth of grass, having more growing lambs when grass is most plentiful. All of the lamb from Balcaskie is Organic certified and Pasture for life assured.
